Early to Rise Spinach Salad

spinach_bowl.jpgThis month’s recipe honors one of the season’s early risers. Spinach, often the first vegetable to mature in the garden vibrates with life and nutritional value. Raw dark rich crunchy leaves eaten on their own or with a light vinaigrette beautifully satiate the bodies needs.

spinach.jpgSpinach has a large nutritional value, especially when fresh. It is an excellent source of vitamin K, vitamin A, manganese, magnesium, iron, vitamin C, vitamin B2, calcium, potassium, and vitamin B6. It is also a very good source of dietary fiber, copper, protein, phosphorous, zinc and vitamin E. In addition, it is a good source of omega-3 fatty acids, niacin and selenium. Besides that, it’s real tasty!

The dressing

Ingredients
1/2 cup Dijon mustard;
1 1/2 cups of oil;
1 1/3 cups orange juice concentrate;
1/4 cup Lemon juice;
1/2 cup honey;
2 Table spoons Roasted cumin;
1 Tablespoon Turmeric;
1 Tablespoon Paprika;

Instructions

Mix all ingredients with the exception of the oil.
As you whisk ingredients, slowly dribble oil in to create an emulsion.
