Baby that’s a wrap!

Baby Root Wrap

ingredients
1 baby carrot
1 baby beet
1 zucchini slice
1 chive
Clean the baby roots and cut off the greens just above where they attach to the roots. Using a vegetable peeler or small cheese peeler, peel a thin lengthwise piece from a small zucchini. Wrap the carrot and the beet together with this thin piece of zucchini. Using the chive, tie a gentle knot around the bundle to hold it together.

18.recipe1If you’d like, you can steam the baby roots to make for easier digestion. If you choose to do this, it’s best to steam them separately as the beet will turn the carrot pink!

  1. I stayed at the ashram 15 months ago and ate a white gooey supplement with breakfast that really seemed to get digestion going. I have been unable to find it in your recipes, and would really appreciate knowing how to make it. It is sort of bitter tasting and there was a little note telling us not to take too much….
